I’m always on the lookout for the perfect anytime cake. You know, the cake that works for breakfast or as a mid-afternoon snack; the kind of cake that has just the right touch of sweetness and pairs well with a strong cup of tea. This blood orange cake — which happens to be gluen-free — is just what I’ve been searching for.

This cake is rich and moist, thanks to the olive oil and Greek yogurt in the batter. I love how the tart blood orange — whole slices, juice, and zest — helps balance the sugar as well.
