Make This 10-Minute Chickpea Avocado Sandwich for Lunch

Figuring out what to make for lunch every day can be tricky. You want something relatively easy to whip up that will give you energy to fuel through the rest of your day. A sandwich is always a good bet — especially if it’s this vegetarian chickpea and avocado one.

Sure, a turkey sandwich is a classic, but if you don’t eat meat or you’re trying to eat less of it, this protein-packed alternative will hit the spot just as well. The best part? It comes together in just 10 minutes.

Simply mash some avocado with olive oil in a bowl, then mash in the chickpeas. Add in some scallion, salt, pepper, cayenne, and lemon juice and you’ve got your sandwich filling! The author suggests optional add-ons of sprouts, radish, grated carrots, cucumber, or fresh herbs (cilantro, basil, dill, Italian parsley), all of which would add some nice crunch and freshness.

Use your favorite bread — whole-grain or sourdough would be lovely here — to make the sandwich, cut it in half, and dig in! Or you can pack it in a plastic bag and bring it to work with you.
