There are seemingly endless ways to cook chicken, but this one in particular should be at the top of your must-make list. With a Sriracha-honey marinade and plenty of fresh lime juice, these spicy-sweet-tangy chicken thighs pack a punch. Make it once and I guarantee your family will be begging for this dish all the time! I’m sorry in advance.

The combination of chicken thighs, oil, and a hot cast iron skillet means you’re in for crispy skin and juicy meat (aka perfection) and the marinade — a mixture of honey, Sriracha, garlic, rice wine vinegar, soy sauce and lime juice — ensures tangy-spicy flavor infused in every bite.

The chicken needs at least 30 minutes to marinate, which means you should get that portion done the minute you walk in the door. While the chicken is marinating you can get some rice cooking or whip up a big salad. Then all you have to do is cook the chicken quickly on the stovetop and finish it with lime, sesame seeds, and scallions. Serve it over that rice or salad, or alongside some steamed broccoli and you’ve got a delicious meal in under an hour.
