Are you still mapping out your Easter menu? Or are you on dessert duty for brunch at your sister-in-law’s house on Sunday? Either way, I’ve got the perfect sweet treat for you to make: a carrot cake roll!

Traditional carrot cake is covered with cream cheese frosting, but this rolled version switches things up by having the frosting swirled within the cake. Translation: You don’t have to worry about applying crumb coats or executing any other fancy frosting techniques! You also don’t have to deal with baking multiple cake layers in round pans — just grab a jelly roll pan and you’ll be all set.

Filled with warm spices like cinnamon, ginger, nutmeg, and clove, this fragrant and not-too-sweet cake is the perfect way to end your Easter brunch. The hardest part is rolling the cake without tearing it, but if you do have a few blemishes, you can always shower it generously with powdered sugar before serving. (No one will complain about extra powdered sugar — trust me.)
