Make the Easter Bunny Happy with This Carrot Cake Roll

Traditional carrot cake is covered with cream cheese frosting, but this rolled version switches things up by having the frosting swirled within the cake. Translation: You don’t have to worry about applying crumb coats or executing any other fancy frosting techniques! You also don’t have to deal with baking multiple cake layers in round pans — just grab a jelly roll pan and you’ll be all set.
Filled with warm spices like cinnamon, ginger, nutmeg, and clove, this fragrant and not-too-sweet cake is the perfect way to end your Easter brunch. The hardest part is rolling the cake without tearing it, but if you do have a few blemishes, you can always shower it generously with powdered sugar before serving. (No one will complain about extra powdered sugar — trust me.)
