Make Mornings Better with These Easy Egg Cups

Sometimes all it takes to make your morning a little better is a simple yet special breakfast. Grabbing a granola bar on the way out the door? Simple, but not special. Microwaving a packet of oatmeal at the office? Again, simple, but not special.

These baked egg cups will only take about 15 minutes of your time and make you feel ready to take on the day.

All you have to do is cut the crusts off slices of whole-wheat bread, and press each slice into the well of a buttered muffin tin. Once you’ve successful squished the bread into a cup shape, crack an egg in each cup and place in the oven to bake.

To make things a little more luxurious, sprinkle some shredded cheese over the cups about 10 minutes into baking, and then place the cups back in the oven to finish cooking.

Once the cups are done baking, garnish with some fresh chopped chives and a little extra salt and pepper, to taste. These are great for kids, too!
