These Taco Stuffed Shells Are the Best of Both Worlds
Yesterday might’ve been Taco Tuesday, but that doesn’t mean you can’t keep the party going. With these stuffed shells, you get all the flavor of beef tacos in baked pasta casserole form — and it’s all covered in a gorgeous golden-brown layer of melted cheese. Yeah, this food mash-up is truly the best of both worlds.
The best thing about this dish is that it has major make-ahead potential. For starters, you can boil the shells and make the filling (a mixture of ground beef, taco seasoning, olives, fire-roasted green chilies, salsa, and cheese) ahead of time, let them cool, and then keep them in the fridge until you’re ready to assemble. Or you can get all the way through assembly and then freeze the whole tray of stuffed shells and just toss it in the oven when you’re ready to eat.
Once baked, garnish with cilantro, tomatoes, avocados, and jalapeños for extra flair. Bring the dish right to the table and let everyone help themselves!
