As soon as the weather warms up, many people are suddenly eager to dine outside. Bistro tables along a riverfront or a beachside deck make for lovely al fresco dining, but it can be just as enjoyable to plan a picnic in an idyllic spot you choose yourself. The key to a good picnic, though, is packing foods that travel well in a cooler.

There are a few key features that make foods cooler-friendly. Look for recipes that involve some crunch, such as fresh veggies tossed with a delicious dressing, or baked goods that won’t crumble. It’s a good idea as well to find items that don’t need to be heated and, better yet, ones that can offer some respite from the outdoor heat.

It also matters how you pack a picnic. Place baked goods, sandwiches, and flatbreads in a hard-sided watertight container so that they retain their shape. Salads and side dishes travel well in lidded bowls or silicone bags, for instance, while a sturdy cooler also helps food travel safely to its destination. But if you need more help figuring out exactly what to pack, I’ve rounded up 15 recipes that I know will arrive safely and taste great (I’ve tried them myself!). Check out these refreshing summer recipes for all your picnicking needs.

How To Make the Best Pasta Salad Without Mayo

While mayonnaise is a culinary delight, it does not necessarily travel well in warm temperatures. Your grandmother’s macaroni salad recipe is not the best choice to pack for the beach, but this option is. It’s made with vinaigrette and tossed with soft cheese, and you can add some hard salami or pepperoni cubes if you need more protein.

Fruit Pizza with Sugar Cookie Crust

Every picnic needs a good dessert — or you could make it the main course, if you want. This fruit pizza is made to be eaten cold, so place some ice around it in your cooler before you set out for wide open spaces. The cream cheese topping holds up better in a cooler than mayonnaise, but the key to traveling with flatbreads and pizzas is in the packaging. Cut the pizza and place it in a shallow container with wax paper in between each layer. Set it in the bottom of the cooler so that food placed on top keeps it secure.
