Make a Perfect Stack of Blueberry Pancakes This Weekend
When’s the last time you made pancakes? Whether you’re hosting friends for brunch or making breakfast for your family, pancakes are often a special treat reserved for the weekend. This is not yogurt eaten hastily at your desk or a granola bar scarfed on the train to work — this is a fluffy stack of pancakes that took time to prepare, and they should be slowly savored. The fact that you get to stuff them with blueberries and top them with copious amounts of butter and maple syrup really is just the icing on the (pan)cake.
The batter for these pancakes is pretty classic and straightforward. All you need is all-purpose flour, sugar, baking powder and soda, salt, milk, sour cream, eggs, butter, and, of course, blueberries.
While some recipes call for you to sprinkle the blueberries on one side of the pancake as the other side is cooking on the griddle, this version has you gently fold the berries into the batter right before cooking. If you’re not satisfied with the amount of blueberries that get into your actual pancake, don’t worry — you can always throw some more on top before you dig in.
Any weekend is a good time to make pancakes, but you should make blueberry pancakes ASAP while blueberries are still in season. Not only do they taste their sweetest now, but they’re also super affordable!
