Even while we shelter in place, the trees have started flowering and the days are getting longer. Spring is here! And these low-carb recipes celebrate the season. They make use of spring favorites like asparagus, radishes, and tender greens but are also understanding of just how important it is to be flexible right now.

You can’t talk about spring without talking about asparagus. This frittata is packed with the green vegetable and is made extra-flavorful with crispy prosciutto and creamy goat cheese.

2. Skillet Cod with Lemon and Capers

Any white fish would work well here, like tilapia, snapper, or haddock — so use whatever you might already have in the freezer or whatever you can get at the store.

This smart recipe calls for cooking the steak on a cooling rack that’s set on top of a baking sheet of asparagus, so some of the juices will drip onto the veggies to flavor them.

4. Radish and Turnip Hash with Fried Eggs

Radishes and turnips replace the usual potatoes in this spring hash to make it extra low-carb-friendly. You can replace the green garlic with regular garlic cloves or even a few shakes of garlic powder.

This 5-ingredient dinner comes together in under 20 minutes — and cleanup is just as fast. You could even use frozen asparagus spears and use bite-sized pieces of boneless, skinless chicken thighs, if that’s what you have.

9. Cilantro-Lime Chicken

Using both lime zest and juice for this chicken ensures it will have plenty of tang. Serve it over cauliflower rice or with roasted seasonal veggies to keep it low-carb.
