If you’re looking for a keto-friendly, low-carb meal that is wildly rich and flavorful, you have to try this recipe for shrimp and grits. The adaptation is so spot-on, you might not even notice the substitutions.

Jocelyn Delk Adams from Grandbaby Cakes writes that the frozen cauliflower mashed potatoes from the grocery store have a texture that closely imitates traditional grits. Like cauliflower rice and other cauliflower-based carb substitutes, it still tastes like cauliflower, but once you melt enough cheddar and Parmesan into it, you can hardly detect the cauliflower at all. And if you’d rather make your own cauliflower “grits” at home, you can do that too.

“Keto-friendly and completely divine, this recipe will knock your socks off,” Jocelyn writes. “You won’t even know I cut the carbs because of the luscious Cajun sauce that bathes the shrimp.” There’s enough creamy, Cajun-spiced sauce to spoon it liberally over the grits, as well. Heavy cream makes the sauce extra thick and rich, and you won’t want to waste a drop. Sprinkle chopped bacon and parsley over the top to give it a bit of texture and color, and you’ll have a low-carb dinner you’ll want to make over and over again.
