How to Make Egg White Bites

  1. Start by finely chopping the roasted red bell pepper and spinach.
  2. Next, blend the egg whites, cottage cheese, and mozzarella cheese for 60 seconds. You want to really create a lot of bubbles here.
  3. Coat a silicone muffin pan with nonstick spray and add in the roasted red bell pepper and spinach. Place the liner on a baking sheet and then fill each cavity with the egg white mixture about 3/4 of the way full and sprinkle with salt and pepper.
  4. Fill the baking sheet with boiling water about 1/2 of the way full, then bake at 350°F for about 35 minutes or until the tops are firm to the touch. Let cool for about 5 minutes before removing from the mold and enjoy warm!

Tips and Tricks

  • You absolutely need to use a silicone muffin liner for this recipe. It makes removing the egg whites much easier.
  • Be sure to generously coat the liners with nonstick spray; otherwise they will stick.
  • Place the silicone mold on the baking sheet before filling each cavity with the egg white mixture. It’s too hard to move the filled silicone mold without making a mess.

How to Serve and Store Egg White Bites

  • Store Starbucks Egg White Bites in an airtight container in the fridge and enjoy within 3 days for best results.
  • To reheat egg white bites, simply add them to a plate, cover with a paper towel, and heat in the microwave for about 30 seconds (it’ll depend on the strength of your microwave).
