Loaded Cauliflower & Chicken Casserole Is Calling Your Name

Casseroles don’t exactly have a reputation for being beacons of health in the weeknight dinner world. They’re often loaded with carbs and smothered with cheese (which is just the way we like them, to be honest). But this particular casserole diverts from the norm a bit. It’s lacking in the carb department, but don’t worry — it’s still smothered in plenty of cheese.
It’s a welcome casserole anomaly, and it’s for what’s for dinner tonight.
The secret ingredient is not so secret since it’s the star of the photo above and it’s featured prominently in the recipe title, but in case you missed it the secret ingredient is … cauliflower. Phew, so good to get that out in the open.
Yes, we are still on a cauliflower kick, and if you ever doubted that for a second, just know that this casserole has not one, but two, heads of cauliflower in it. It’s also packed with roasted chicken breasts, shredded Monterey Jack cheese, cheddar cheese, green onions, and bacon. Yay, bacon!
There are a few stages involved in the making of this casserole. There’s the chicken-roasting stage (you can skip this stage and cheat with a rotisserie chicken if you want); there’s the cauliflower-steaming-on-the-stove stage; there’s the stir-it-all-together stage; tnd then then there’s the bake-it-and-wait-patiently-for-25-minutes stage. Oh, and don’t forget the eating stage! That’s the stage that you’re not going to want to miss.
