Loaded Baked Potato and Chicken Casserole Is a Dinner Dream

We all have a casserole recipe up our sleeves that we probably wouldn’t Instagram and yet we make anyway because it tastes really good and that’s what matters. It may look like a downright mess, but that doesn’t mean it isn’t delicious. The next on my list of kooky-looking casseroles is this loaded baked potato and chicken casserole from Yum Expert. It’s what’s on the inside that counts, people.

Speaking of the inside, here’s what’s inside of this casserole: cubed chicken breasts, potatoes, olive oil, salt, pepper, paprika, garlic powder, hot sauce, cheddar cheese, crumbled bacon, and green onion. If you have all of those ingredients handy, you’re ready to throw together this weeknight meat and potatoes extravaganza. (Literally, throw it together.)

The best part of this dish, in my humble opinion, is that the potatoes are tossed with a little olive oil, paprika, and hot sauce. What hot sauce, might you ask? The recipe does not specify, so I encourage you to let loose and use any hot sauce that has been chilling in your pantry.

Cook the potatoes first to make sure they are fork-tender and not little bits of rock-hard starch scattered throughout the casserole. Once they’ve been going for 45 minutes, add in marinated chicken, cheese, bacon, and green onions and cook until melted and bubbly.
