I would be lying if I told you that I like all mealtimes equally. What Is the Big Spoon Roasters Linzer Cookie Cashew & Almond Butter?

As its name suggests,Big Spoon Roasters’ Linzer Cookie Cashew & Almond Butter is a nut butter that captures the flavor of the adorable (and tasty) sandwich cookie. Made with eight ingredients, this nut butter is unique for how fruity and bright it is. The first flavor I noticed when I ate it right off the spoon was tart raspberries, followed immediately by the refreshing, puckery sensation of lemon. Plus, some cashews and almonds give the spread some crunch, also acting as that hearty, comforting cookie base. A little note of salt rounds out the bite.

It’s hard not to fall in love with this nut butter as soon as you taste it — especially if you’re a big-time raspberry fan like I am. Why I Love the Big Spoon Roasters Linzer Cookie Cashew & Almond Butter

The Big Spoon Roasters Linzer Cookie Cashew & Almond Butter is absolutely delicious on toast, but because of its totally unique flavor profile, I found myself motivated to include it in one of my weekly bakes. In a recent Instagram video that crossed my feed, Great British Bake Off winner Frances Quinn freezes peanut butter into chocolate bar molds and then cut them into chunks to bake with. Naturally, I was instantly eager to try out this idea with my jar of Linzer cookie nut butter. Combining my love of dessert and breakfast, I decided that the best vehicle for this would be a raspberry and white chocolate scone, incorporating chunks of the nut butter throughout.

I’m happy to report that my plan worked! These scones were so delicious; the chunks of Linzer cookie nut butter were complemented by sweet pops of white chocolate and fresh bursts of raspberry. This brings me to perhaps the aspect I love most about this nut butter: It’s inspiring.

That feels like a big thing to say about nut butter, but in this case, it’s wholeheartedly true. While you can use it more simply on toast (like I have) or on top of oatmeal, I love that I can also elevate my bakes with it, especially during winter when berries aren’t in season. Plus, it’s not actually all that sweet, which I really appreciate. A cookie-inspired nut butter could easily veer toward saccharine, but this one is more versatile.

While I’ll never get rid of my standard peanut butter entirely, I’ve been having so much fun using Big Spoon Roasters Linzer Cookie Cashew & Almond Butter as an alternative.
