Lemon Cookies & Carrot Cake Bites: Dessert Buffet for a Spring Wedding Shower
Any excuse to eat dessert in the middle of the afternoon, right? But a wedding shower makes a little pre-dinner dessert action even more justifiable! This particular spread of lovely bite-sized treats is easy to put together and still feels classy and elegant — important details if you happen to be the one organizing the shower.

A wedding shower such a fun and lighthearted affair — and yet it can be rather stressful to the one hosting it. You don’t always know everyone who’s attending, there’s pressure to have everything be perfect, and you might not have a very big budget to work with. Dessert buffet to the rescue! Small plates of colorful desserts look pretty on a buffet table, and there’s sure to be something to satisfy everyone’s sweet tooth. It’s also easy to make all the desserts ahead of time, which takes a lot of pressure off of you during the shower.
I like the idea of mixing several kinds of cookies and small treats with one big fancy cake (the Rhubarb Cake) and one warm dessert (the Ricotta Blintzes). All the desserts can be made over the course of a few days — even the blintzes can be made the day before and then warmed up in the oven just as guests arrive. If you have a few friends who are also coming to the shower, you can divide up the recipes to share some of the workload.
To make the buffet table pretty and shower-worthy, cover it with a tablecloth and arrange serving platters at different heights — this creates a more dramatic visual effect. If you don’t have things like cake stands or tiered dessert trays, you can improvise with overturned cups topped with dinner plates (secured with a discrete piece of duct tape). I also like to place a few vases of flowers between the platters, some small bouquets in tumblers and other long-stemmed flowers in tall vases.
Set plates and silverware at one end of the table. If there’s room, you can also set up the drinks on the dessert table, or you can create a separate “beverage station” elsewhere in the room. Since guests will likely be bringing gifts, be sure to have a designated area for them to place their boxes and envelopes.
