Make This Easy Lemon Butter Chicken Again and Again

I didn’t know just how much Americans enjoy cooking with heavy cream until I gained exclusive access to a secret Instant Pot Facebook group. Each night, members tap into the group’s hive mind to brainstorm dinner ideas based on the ingredients that they typically have on hand. Heavy cream (or cream of something) almost always makes an appearance.
My newsfeed is filled with more creamy recipe inspiration than high school friends’ engagement photoshoots. (I highly recommend joining this IP Facebook group if you would like to shift your algorithm to something less depressing). Cream sauce > everlasting love. Amirite?
I know, I know, this lemon butter chicken recipe from Eazy Peazy Mealz isn’t an IP recipe, but it’s an easy one-pan weeknight wonder that I think even my creamy-minded Pothead (that’s what they call themselves!) friends would appreciate. Considering the blog that this recipe comes from, this meal is easy (er, eazy) to make.
Do you have chicken breasts? Garlic? Spinach? Spices? Lemon? White wine? HEAVY CREAM? Yes? Okay, let’s do it.
First, brown the chicken on each side in a skillet and set it aside while you make the pan sauce by sautéing garlic with butter, chicken broth, cream, Parmesan cheese, lemon juice, and thyme. Your kitchen is going to smell really good. Wilt the spinach and then add in the chicken, baking the whole thing off to finish. The chicken is juicy, the sauce is creamy — what more could you really ask for? (Maybe an Instant Pot version of the recipe.)
