Leftover Pizza? Use the Toppings in a Breakfast Omelet!

Here’s a rather hilarious yet practical breakfast suggestion I recently heard. Got leftover pizza? Don’t eat cold pizza for breakfast (as good as that can be… ahem). Peel off the cheese and toppings and throw it all into an omelet!

This actually came from a server at a restaurant. We were packing up our leftovers, and chatting about how just anything (including our leftover Brussels sprouts) could be great for breakfast. I mean, you can put a poached egg on top of nearly anything and call it breakfast, right?

Our server laughed and told us that a friend of his makes “pizza omelets.” When he has cold pizza left over from the night before, he peels off the top layer of cheese, peppers, onions, and whatnot, and throws it on top of a few eggs in an omelet pan. Let the cheese melt and the toppings get hot, and then fold the eggs over. Voilà! Hot breakfast omelet, instead of cold, congealed pizza.

Depending on the toppings, this could be kind of a genius way to repurpose leftovers. What do you think? Would you try a “pizza omelet”? And which toppings do you think would work best? I think that a tomato-basil-mozzarella pizza would work well; Hawaiian, though? Not so much.
