Next week Le Creuset will release their new fall color, one that will fill your head with dreams of boeuf Bourguignon and shimmering demi-glaces. If you’re ready for the cool evenings and cozy comfort foods, then chances are good you’ll want to snuggle up with this new pot. The latest shade is a deep, rich brown that they’re calling Truffle.

Nate Collier, Le Creuset’s director of marketing communications, says the Truffle line is “updated with an elegant touch of a stainless steel knob, reminiscent of brushed metal fixtures,” and says the line will include 18 different pieces, such as the signature round Dutch ovens, braisers, saucepans, and skillets along with French presses, a  cappuccino and saucer set, and a rectangular casserole to name a few.

A press release about the line describes the new color as “grounded in nature’s palette,” evoking images of the loamy soil of Provence, where the namesake mushrooms can be found, and “where hearty, comforting dishes always have a place at the table.”

The Truffle earth tone would be a great match if you have a couple of other Le Creuset pieces in your home, specifically the similarly warm and earthy Meringue shade from the New Calm Collection. “Truffle is a natural extension of the muted neutral palette we introduced this spring with Meringue,” Collier explains. “The warmer rich tones evoke the shoulder season into fall where we return to relaxed roots of gathering together and enjoying a seasonal harvest.”

Alternatively, you could go full-on fall with the other new color of the season, Persimmon. A shimmery orange that manages to bridge the brightness of summer with the chill of winter, it pairs with Truffle’s all-in attitude on fall. A Persimmon casserole dish seems like just the thing for baking layered lasagnas or spicy enchiladas in.

But of course you’ll have to be patient: The full Truffle line doesn’t come out until October 1, when you’ll find it on the Le Creuset website and in retailers around the country.
