I’m a lazy cook, so anything that’s quick and requires little cleanup is my usual go-to. I love the Original Extra Virgin Olive Oil for roasting veggies like mini bell peppers and potatoes with dashes of Greektown Spice Blend on top. But my meal-prep MVP is the Greek Herb & Lemon Olive Oil, which is truly liquid gold. It’s zingy, a little spicy, and tastes great on its own — I literally want to pour some into a wine glass and drink it straight! Instead, I use it as a marinade for roasted chicken, for frying scrambled eggs seasoned with Greektown Spice Blend, and for making one particular pasta dish on repeat: pasta with sliced grape tomatoes, thawed frozen spinach, a nice drizzle of Greek Herb & Lemon Olive Oil, and a good sprinkling of Greektown Spice Blend. I just cook the pasta, toss in the other ingredients, and there’s no additional sauce or topping needed. This dish is quick, easy, light, and unbelievably delicious, and it works as a cold pasta salad as well.
