I did not try that balsamic vinegar and seltzer “Coke” recipe that was (and kind of still is) taking over the internet. Not because I wasn’t curious. I was very curious and I actually spent way too much time reading honest reviews from people I trust in the food world. Ultimately, I decided that there were better ways to use my precious balsamic vinegar. With that in mind, I will tell you that I have three new vinegars that I will absolutely be mixing into seltzer.

Allow me to introduce you to the newest offering from the people at Kosterina: the Crushed Fruit Vinegar Trio. That’s right, the brand known for its Dark Chocolate Balsamic Vinegar and high-quality Extra Virgin Olive Oil (try the garlic one!) has just released three fruit-infused vinegars. There’s Tangerine, Strawberry, and Blueberry — and I would have a very hard time picking a favorite if you asked me to! (But maybe I’d say Tangerine, if you forced me to pick! Or the Strawberry? I told you it’d be hard!)

I got to sample all three a few weeks ago (perks of the job!) and they’re all perfectly tangy-yet-sweet. In fact, they were so sweet, I did a double take when I read that they’re made without any added sugars. They’re made from white balsamic grape must sourced from Italy and are as flavorful as they are bright.

While I could (and did!) certainly drink these on their own, I’ve got a long list of ways I want to use them this summer. Of course, I’ll be mixing them into seltzers and even cocktails. I’ll also be using them in homemade salad dressings. I may pour a drizzle or three over fruit salad, bowls of ice cream, and a chilled summer soup. I’d also like to play around with these on top of some soft-ripened cheeses or a chocolatey dessert.

Want in on this fun with me? The Crushed Fruit Vinegar Trio is officially available now on Kosterina‘s website. And come autumn, you’ll be able to find it nationally in Whole Foods Market. But honestly, I wouldn’t wait that long. You’re going to want these for the summer.
