KitchenAid refers to this handy attachment as a pasta press, and the design is similar to a pasta extruder. This means that rather than rolling your pasta dough into sheets and then cutting it into flat shapes like linguini or fettuccini, the dough gets pushed through one of six included discs to create various shapes.
