This King Arthur Baking Pan Is the Secret to the Best Gluten-Free Bread
I’ve been eating a gluten-free diet for a little more than a decade, and in that time I’ve baked a lot of cakes, cookies, and breads — all with varying levels of success. When I first cut out wheat, barley, and rye for allergy reasons, I struggled to find a good gluten-free flour mix that was comparable to its gluten-full counterpart. But with the increase of people adopting gluten-free diets over the years came innovations in that space, and now I can confidently bake with practically any of the available store-bought options (Bob’s Red Mill, King Arthur Baking, and Cup4Cup are my favorites).
My one complaint with my gluten-free bakes, though, was that the rise was underwhelming — especially in my bread and loaf cakes. I’d follow a recipe, using a trusted gluten-free all-purpose flour mix, and it would come out tasting great but looking dense and squat. I accepted this as an inevitable part of gluten-free baking — until I found King Arthur Baking’s Perfect Gluten-Free Loaf Pan.
Yes, this pan is made especially for baking gluten-free loaves. It seems highly niche, but if you bake gluten-free with any sort of regularity, you will appreciate its specificity. So, how does it work? According to the folks at King Arthur Baking, “Gluten-free yeast loaves require more support as they rise and bake. The extra-tall sides on this pan will do just that, creating a beautifully shaped gluten-free loaf, ideal for sandwiches.”
I’ve had the pan now for a few months, and I’ve noticed a big difference in the height of these loaves versus ones baked in my standard loaf pan, which is very exciting! Before you accuse me of being motivated purely by aesthetics (it doesn’t hurt, though, that the loaves do look more attractive for the ‘gram), these taller loaves mean taller slices — and, therefore, more surface area to accommodate sandwich fixings. The company does specifically call out yeast loaves in the product description, but I’ve also successfully made plenty of gluten-free quick breads (like banana and pumpkin breads) in the pan.
Amazingly, I’ve never had any issue with the loaves sticking to the pan; they always slide out with ease. I do also have to sheepishly admit that I put the pan in the dishwasher after each use (a habit of mine, if you’ve ever read any of my other product reviews here over the years!), with no detriment to the pan so far. (Note: KAB recommends hand-wash only.)
