Kimchi Fried Rice Is the Cold-Weather Comfort Food You Crave

If you’ve ever needed your dinners (and breakfasts and lunches) to moonlight as a weighted blanket, it’s in 2020. You need comfort foods! The nachos, the pizzas, the congee. And also Alice Choi’s irresistible kimchi fried rice. “For kimchi lovers, kimchi fried rice is the ultimate comfort food,” she explains. “This dish is one of my absolute favorites to make on a cold day when we are staying in. I love that you get spicy, a little sour, salty and umami all in one bite.”

This pantry-friendly recipe comes together in a pinch when you don’t know what to make for dinner, but also demand something utterly delicious and cozy. After you cook your bacon, you basically add everything else to the pan (like rice, kimchi, gochujang, soy sauce, fish sauce, and sesame oil) and cook until slightly crispy throughout. “I highly recommend topping it with a fried egg,” Alice says. She also suggests topping your bowl with sesame seeds, scallions, and dried seaweed.

What makes this dish so special, of course, is the addition of kimchi. There are plenty of options to choose from the grocery store, but Alice also has a great recipe for a vegan kimchi from her aunt on her site. Alice’s kimchi recipe is easy, but also time-intensive. Prepping the cabbage takes a few hours (or overnight) and it takes a few days to ferment. Bu it sounds very much worth the effort — especially if you plan on making this recipe a lot in the coming months.
