These Make-Ahead Breakfast Bombs Are a Keto-Friendly Breakfast
Mornings can be the most frustrating time of day, but they are a lot easier if you have breakfast made in advance and ready to go. These keto-friendly breakfast bombs are a meal prepper’s dream. Make them at the beginning of the week, freeze them, then take one out whenever you need a fast, easy, keto-friendly breakfast. You can even eat them in the car without making a mess.
These muffins do require a lot of ingredients, but most of them are reliable pantry staples. Mix almond flour, baking soda, and baking powder, then add cold butter in cubes and pulse it in a food processor until it looks like a big bowl of large crumbs.
Add sour cream, apple cider vinegar, and an egg, and process the dough on low, then let it sit for about five minutes.
While the dough rests, combine cooked, crumbled bacon and sausage with shredded cheese and eggs. Then put the dough into the egg mixture and toss it gently, or mix it with your hands.
Bake them in a muffin tin until they’re fully set and starting to turn golden around the edges. Once they’re done you can keep them in the fridge for a few days, or store them in the freezer so you’ll always have them on hand. These little muffins are a full breakfast that fits in the palm of your hand, and they’ll make a slow morning that much faster.
