Vegetables are the heart of summer for us here at Kitchn, from our summer kickoff package, Eat More Plants (the editorial highlight of my year!), to our now-traditional July theme: Vegetables First. I’m here for the color, the life, and the crunch of vegetables — and this month Kitchn has loads of fresh veg in just the ways you want to eat them. I won’t go on (after all, it’s summer, and I hope you’re reading this at a picnic table or at the pool). Let me get right to it: My top 10 vegetable countdown for this month — the summer vegetables that really make this hot weather worth it.
