Is It Fall Yet? Beets Me.

My CSA box is starting to look like a root cellar, with beets, onions, garlic, potatoes, and apples making up the bulk of this week’s share. There were a few summer stragglers — corn, you sweet thing, you’re not out of the game yet! — but I’m feeling a definite shift toward cool-weather fare.

How I’m Going to Eat and Cook My Way Through It

Beets: If you have a bunch of beets this week, and you haven’t yet made The Best Ever Veggie Burger, then this is the week to try it. These burgers are actually vegan, incredibly tasty, and worthy of their impressive moniker.

Kale: I think I’ve gotten a bunch of kale every week this summer save for maybe one or two. I’m moving towards warming soups now that the weather is getting cooler, like this Chicken Stew with Kale and Cannellini Beans or (a personal favorite) this Coconut Milk Soup with Salmon, Winter Squash, and Kale from Healthy Green Kitchen. I’ve made this soup a bunch of times, subbing in pumpkin, sweet potatoes, and butternut squash, and it’s all been delicious.

Eggplant: In all honesty, I’m getting a little tired of eggplant, which means that I need to find something new to do with it.
This post has all kinds of ideas. What’s your favorite thing to do with eggplant?

Potatoes: I am a notorious black thumb, and the only plant I’ve kept alive recently is my rosemary plant. Since that’s inevitably also on its way to an early grave, I should make these
Roasted Rosemary Potatoes now while I still have the chance.

Molly Delicious Apples: My Molly Delicious apples are likely too sweet for baking, but if you have tart apples in your care, and you’re craving a delicious fall dessert, then you should make this
Apple Spice Cake with Brown Sugar Meringue. Not convinced? Just imagine how amazing your kitchen will smell.

Onions and Garlic: I never have to find things to do with these ingredients, since they’re a staple in so many recipes. But, I do like the idea of freezing a big batch of caramelized onions and freezing roasted garlic to have at the ready for fall cooking.

Sweet Corn and Bell Peppers: Last week I froze my tomatoes, and this week I plan to continuing prepping and freezing some of my produce, including the sweet corn and bell peppers. If you’d like to do that as well, these posts are an excellent guide:
