Forget brine, the newest but oldest way to prep pickles is by using fermentation, reports the Minneapolis Star Tribune. As with most food trends this is one of those "everything old is new again" situations, and we loved this story of a woman bringing her grandmother's pickles back to a new generation.
Fermented pickles were a traditional food for many Europeans. Similar to sauerkraut and kimchi, two other fermented foods, fermented pickles have good bacteria that are often missing from pasteurized products.
