This Instant Pot Thai Chicken Will Rock Your World
The Instant Pot is a weeknight wonder for its ability to produce flavorful meals in lightning-fast time. The seven-in-one appliance makes it possible to get perfectly cooked, juicy chicken thighs in a Thai-inspired peanut-lime sauce on the table in under 30 minutes. It doesn’t get any better or easier than that!
The key to developing the most flavor in this dish is cooking the boneless chicken thighs on the Browning/Sauté setting first. Once all the thighs have been browned and set aside, you mix chicken broth, peanut butter, soy sauce, ginger, and cayenne in the Instant Pot. Then you return the chicken to the pot, close the lid, and cook on High Pressure for nine minutes. After a quick steam release, you can stir in lime and cilantro and you’re ready to go.
Serve over rice, cauliflower rice, or a green salad, and garnish with crushed peanuts, lime wedges, and fresh cilantro. And just like that, you have dinner in 25 minutes!
