It doesn’t take a lot to cook up really great salmon fillets in your Instant Pot. In fact, three ingredients and about 10 minutes are all you need. The seasoned fillets get topped with cubed butter and sliced lemon, both of which gently infuse the fish as it cooks. The lemon adds a hint of bright flavor, while the butter lends richness and keeps the fillets tender.

The result? Impossibly juicy, melt-in-your-mouth-tender salmon, boasting a texture reminiscent of slow-roasted salmon in a fraction of the time. I strongly urge you to slot it into your dinner rotation ASAP.

Instant Pot Salmon

Ingredients

  • 1/2

    medium lemon

  • 1 tablespoon

    unsalted butter

  • 2

    (6-ounce) skin-on salmon fillets

  • 1/4 teaspoon

    kosher salt

  • 1 cup

    water

Instructions

  1. Thinly slice 1/2 medium lemon. Cut 1 tablespoon unsalted butter into 4 pieces. Season 2 salmon fillets with 1/4 teaspoon kosher salt.

  2. Fit a steamer basket into a 6-quart or larger Instant Pot or electric pressure cooker. The one that came with the pressure cooker or just a generic folding steamer basket will both work. Pour in 1 cup water. Place the salmon skin-side down in the basket in a single layer. Top with the butter and lemon slices.

  3. Lock the lid on and make sure the pressure valve is set to seal. Set to cook under HIGH pressure for 5 minutes. It will take about 6 minutes to come up to pressure. When the cook time is up, quick release the pressure. Serve immediately.
