Well, well, well, what do we have here? Another fast and easy weeknight chicken thigh recipe, that’s what! If you have a package of chicken thighs, a few pantry staples, and an Instant Pot, you can have this honey sesame chicken on the table in less than 15 minutes — I kid you not.
(For those of you who don’t already have one of these magical pots, might I suggest the florally swathed Pioneer Woman version?)
As soon as you’ve acquired an Instant Pot, switch it to sauté mode and allow it to heat up so that you can sear the thighs. While it gets to temperature, make a quick honey-sesame sauce by whisking together chicken broth, honey, soy sauce, apple cider vinegar, chili-garlic sauce, sesame oil, and a little cornstarch. (Set the sauce aside.) Sear the thighs until they are golden, add in garlic, then pour in the sauce. Top with sesame seeds and seal the lid. This is when you no longer have to be actively involved in dinner preparations.
Set your IP to high pressure for eight minutes — and then wait! As soon as the timer is off, flick it to the quick-release setting and uncover very carefully. For the full effect, serve these thighs over steamed rice and top with chopped scallions.
