Make French Onion Soup in Your Instant Pot Tonight

I regularly dream about the French onion soup I had with my mom while she was visiting me in Paris. I was a relatively broke college student studying abroad, and I mostly lived off of cheap wine and baguettes (as one does). When she came to visit, she took me out to this small, cheapish spot in my neighborhood and ordered a seemingly ordinary bowl of French onion soup. Reader: It was pure cooking magic. It was broth-y velvet with a blanket of salty cheese. It was a perfect meal.

I don’t remember the restaurant name anymore, and I definitely don’t live in Paris, but that doesn’t mean I can’t try to recreate this magical soup. But instead of waiting for the onions to cook down for hours, I’m going to use a little cooking magic of my own: the Instant Pot!

Yes, you can make French onion soup in the Instant Pot. This recipe from Well Plated takes less than an hour to make, which means you could have it TONIGHT if you’re in the mood. To start, sauté onions, garlic, thyme, and a bay leaf in your Instant Pot. Then you add a little bit of water and set the IP on high for 20 minutes to caramelize the onions. Then you add some wine and simmer for a bit, and then add the beef broth and simmer for a bit. And that’s about it.

The cheesy bread topping is made outside of the Instant Pot (sorry to disappoint). You simply broil the cheese-laden bread until bubbly and put it on your bowls of soup.

Sure, it’s not Paris, but it will definitely do.
