Make Copycat Starbucks Egg Bites in Your Instant Pot

We’ll admit it: We are big fans of the sous vide egg bites at Starbucks. They’re so fluffy, protein-packed, and a really good alternative to having what’s essentially a large slab of cake for breakfast.
What if you want to try them but don’t want to spend the big bucks at Starbucks every day, don’t live anywhere near a Costco for their cheaper version, and don’t have a sous vide device? We have good news: You can make a similar version of these bites using your Instant Pot.
To make this version from Eat.Drink.Love, you will need five eggs, cottage cheese, cream cheese or Greek yogurt, another cheese of your choice, and red or green bell peppers. This recipe is super customizable, though, and you can fill them with whatever ingredient combo you can dream up (or have in your fridge already). Note: You also need a silicone mold for this.
Pour a cup of water into your Instant Pot and place the trivet on top. In a blender, combine the eggs, cottage cheese, cream cheese, cheese, and salt and get it nice and fluffy. Divide the mixture into the silicone mold, place on top of the trivet, and cover with foil. Lock the lid and steam for eight minutes. Wait for the pressure to naturally release for 10 minutes and then manually release the rest. Remove the mold and let sit for two minutes before eating or freezing for later.
