Be a Hero and Make Easy Instant Pot Chicken Ramen in Under an Hour

Upon unboxing my Instant Pot a few years ago, one of my first thoughts was, “Can this thing make ramen?” My hometown is not known for having a plethora of good ramen restaurants, and ramen is notoriously difficult to make. But since the Instant Pot’s whole deal is making ordinary recipes much, much easier, it stood to reason that maybe it could make ramen much, much easier.

This surprisingly simple recipe from Hip Foodie Mom promises to deliver delicious chicken ramen in under an hour — thanks to the Instant Pot and a secret ingredient: Tomatoes!

Hip Foodie Mom says this recipe was inspired by chef Ivan Orkin’s famous roasted tomato ramen. Tomatoes aren’t something you’d typically find in a more traditional ramen recipe, but the author notes that tomatoes have a ton of umami flavor and they go really well with the blended chicken and mushroom broths.

Besides the tomatoes, this recipe is pretty straightforward when it comes to ingredients. In fact, you might already have a bunch of them in your pantry or fridge: instant ramen noodles (but skip the seasoning pack), chicken breast, fresh ginger, garlic, soy sauce, rice wine vinegar, and toasted sesame oil.

You can play around with the toppings here, but Hip Foodie Mom recommends serving the ramen with more cherry tomatoes, soft-boiled eggs, and freshly diced scallions (among other things). I personally think chili oil or hot sauce would be a nice addition to this soup, too.
