Q: What can I do with leftover pork besides making burritos? I am allergic to eggs, so frittatas are out. We have another two days’ worth of the latest roast in the fridge and we already had burritos tonight! Thanks for any ideas.

Editor: Lasagna! Enchiladas! Meatballs! Okay, I’ve never made the latter, but I think pulled pork meatballs just shot to the top of my must-make list. The beauty of a cut of meat like pork shoulder is that it’s the gift that keeps on giving. But I’m with you on pork fatigue — burritos or tacos can become a tired routine.

That’s why we always keep a few fresh ideas up our sleeve for inspiration. How does fried rice sound? Or grilled cheese? Find all those options and more here. And don’t forget you can also freeze it. Nothing beats rifling through the freezer when you feel like you have nothing to eat and coming across a bag of pulled pork you stowed away!

Kitchn readers, how do you use any extra pulled pork?
