How Can I Make Healthier, Homemade “Chicken & Stars” Soup?

Q: I love Campbell’s Chicken & Stars soup. It’s my go-to when I don’t feel well, when I don’t have anything else for dinner, or a later night snack. However, the sodium content in this is super high (not good for my heart). How could I make my own healthy similar-tasting version of Chicken & Stars?

I like to make my own chicken stock, but I’m not a huge fan of the extremely chicken-y scent, so I mainly use that for bases for other dishes. Thanks!

Editor: Maybe try using low-sodium storebought chicken broth? I often find that storebought broth is less strongly chicken-y than my homemade stock, so maybe that would do the trick!

Readers, how would you make homemade Chicken & Stars?
