How Can I Get Over My Fear of High-Heat Cooking?
Q: This is going to sound a little weird, but I’m terrified of cooking with high heat. If a recipe calls for high heat, I always opt for medium. Maybe it’s a decade of living in cheap apartments with a very sensitive smoke alarm right above the stove. I just get really nervous if I have to tip an ingredient into searing hot oil!
I’ve been cooking dinner pretty much every weeknight for the last two years, so I do have some experience around the kitchen, but I feel like I could really improve some of my techniques with deepening the color and flavor in some recipes. Does anyone have any tips to help me get over this fear?!

Editor: I completely understand your fear! I think it’s pretty common and you’re definitely not alone. My advice would be to read through our lessons on sautéing and searing from our Cooking School. I think you’ll find some good info here, plus ideas for how to practice this kind of cooking!
