How Can I Create More Flavor in My Vegetarian Dishes?

Q: I’m fairly new to vegetarian cooking and recently made French onion soup, subbing vegetable stock for the beef stock in the recipe. The soup turned out… meh. My vegetarian (and very supportive) boyfriend said it was great, but as an omnivore it was missing that beefy OOMPH.

Not only for French onion soup, but also for general vegetarian cooking — should I add something to vegetable stock when using it as a replacement? Should I use vegetarian version of “Beef” and “Chick’n” stocks? Will I ever get the same flavors I’m expecting?
