A meal made in the slow cooker is a thing of beauty. Not only does it help you spend less time in the kitchen cooking, but it also promises a meal that’s hot and ready when you are. It’s also a great way to cook a little extra for the week ahead.

This recipe is perfect for all those reasons. It combines easy ingredients, most of which you probably already have on hand, to make perfect pulled chicken with a rich glaze that will keep you coming back for more!

If your freezer looks anything like mine, you have a pack or two of boneless, skinless chicken thighs waiting to be used. This recipe makes perfect use of them.

The chicken is marinated overnight in a tasty mix of soy sauce, white cane vinegar, honey, garlic, bay leaves, and peppercorns. Extra honey and cornstarch make the residual marinade come together to form a glaze that really seals the deal.

Make sure to have some fresh limes on hand to squeeze on top, and be prepared to make this recipe time and time again, as it’s as flavorful as it is easy to prepare!
