I Tried the Wildly Popular Honey-Glazed Cheesy Potato Pancakes, and I Can’t Believe I Wasn’t Making Them Sooner

I’m a die-hard fan of potatoes. It doesn’t matter the variation or how they’re prepared — I love them all. You could really consider me a potato-head. So when I recently stumbled across this recipe for honey-glazed cheesy potato pancakes  created by @kharisma.pc on Instagram, I figured I’d take a swing at making them.

How to Make Honey-Glazed Cheesy Potato Pancakes

Peel three large potatoes and place them in a large pot of water. Boil the potatoes for 20 minutes, until soft. You can use a fork to confirm the softness. Then, in a small mixing bowl, add the potatoes, butter, salt, sugar, and cornstarch. Mix well.

Take a scoop of the mixture, roll together, then flatten. Add mozzarella cheese in the middle, making sure to submerge it within the potato. While adding in your mozzarella, add oil to a medium size pan and turn on medium-high heat. Once your oil is ready and your mozzarella is added, add your pancakes and cook until each side is golden-brown. 

For the honey glaze, In a small pan add some butter and pour a little of honey with a sprinkle of dried parsley, heating until ingredients are blended. Spread atop the pancakes and serve hot.

My Honest Review of Honey-Glazed Cheesy Potato Pancakes 

This recipe didn’t turn out quite how I expected it to. I actually had multiple failed attempts with this one because I was unable to achieve the color or texture of the potato pancakes that the creator showed in the video. 

After multiple tries and brainstorming, though, I was able to come to the conclusion that the type of potatoes used the first time around — which were not mentioned in the video — definitely make all the difference in finding success with this recipe. The first two tries, I used a few russet potatoes I already had at home, but after I realized I should have been using Yukon gold to achieve the desired results, I switched them up. After that, the results were closer to the video and the taste was just as delicious as I’d hoped it to be.

4 Tips for Making Honey-Glazed Cheesy Potato Pancakes

  1. Use Yukon gold potatoes. If you’re looking for the same results that she delivers in the video, Yukon gold potatoes are your best bet. 
  2. Use vegetable oil. Although you are free to use whatever cooking oil you’d like, I found that using vegetable oil works better for keeping these together. 
  3. Don’t cook on high heat. To keep the pancakes from cooking too fast and burning, be sure to turn your pan down to medium heat after the oil heats up.
  4. Don’t skimp on the honey. I found that even with the wrong potatoes used, the honey still made these cheesy potatoes a hit, taste-wise. Add as much or as little as you’d like!
