These Honey BBQ Chicken Kabobs Scream Summer

I’m a firm believer that the only thing better than honey barbecue chicken is honey barbecue chicken on a stick. There’s something about cooking food on skewers that can make even a regular weeknight dinner feel like a festive summer cookout. That — plus the fact that honey barbecue is a flavor combo that nearly everyone can get behind — is what makes this recipe from Damn Delicious the whole package.

To really lock in that honey barbecue flavor, you’re going to want to plan a little bit ahead in the form of a super-yummy marinade. The most time-consuming part about these kabobs is the waiting, but luckily there’s a fun shortcut that makes the finished product totally worth it: doctored-up store bought barbecue sauce.

Start with Texas-style barbecue sauce, which has a kick of spice and a vinegary tang. If that’s not the kind you already have in your pantry, don’t worry — you can really use any barbecue sauce. In a small saucepan, sauté garlic and onion for a few minutes until translucent. Stir in the barbecue sauce, honey (duh!), Dijon mustard, soy sauce, and ground black pepper and ginger and simmer until the flavors meld together.

And there you have it — fancy barbecue sauce (kind of) made from scratch! Use half of the sauce to marinate cubed chicken breast for two to eight hours and save the rest for later, once the skewers hit the grill. This is one sauce you’re definitely not going to want to skimp out on.
