High-Protein, Vegetarian & Dairy-Free Meals for a Breastfeeding Mom?

Q: I’m a breastfeeding mom and a vegetarian, and until now I’ve been eating eggs and various dairy products. But my four-month-old has has just been diagnosed as allergic to dairy, so I need to rethink my meals. I live in a small Southern city where I don’t have access to things like vegan dairy substitutes.

Can you help me find healthy, dairy-free vegetarian or vegan meals that are high in protein, rely on common grocery store ingredients, and aren’t super time consuming? Bonus points if I can make double and freeze half.
