This One-Pan Herby Chicken Recipe Is Anything but Average

This is not your average weeknight dinner chicken recipe! It’s a creative twist on the classic chicken dishes your family is probably already used to. So grab your favorite herbs, and try this citrus marinated one-pan chicken.

This “bright and zingy” marinade doesn’t take professional training to pull off. All it involves is throwing your ingredients together and letting a blender (or food processor) do the work. Forget about time-consuming chopping and dicing — except for removing the skin from the garlic, you can keep your knives in the drawer.

Mint, cilantro, green chili pepper, and parsley make up this herbaceous, beautifully hued chartreuse marinade, which you pour over chicken (both legs and thighs), cover, and let rest for anywhere from 12 to 36 hours, depending on how much time you have on your hands. The marinade imparts your chicken with a zesty flavor and juicy, irresistible meat. You get big flavor for minimal effort.

When you’re ready to cook the chicken, place it skin-side up on your pan and top it with a few fresh orange slices for an extra punch of flavor. You’ll want the tops of the chicken to be golden-brown and crisp, while the bottoms should be tender. Serve with rice, vegetables, or really whatever you want.

Here’s another pro tip: You can freeze the chicken (as long as it’s never been frozen before) when it’s covered in the marinade for up to six months. When you’re ready to cook it, simply defrost it overnight and cook it like normal. It’s the perfect hack for those evenings when you need to make a dinner your family will love in a hurry.
