No Fourth of July menu is complete without a potato salad recipe. Sure, burgers and hot dogs might be on there, and maybe some grilled corn, but there’s something about potato salad that seems quintessential for long days spent outside on hot, sticky summer days. Do you have a recipe ready to go for the big day? If not, I’d love to recommend this gorgeous potato salad from Half Baked Harvest. It’s creamy, but there’s no mayo! And there are plenty of delicious herbs.

“I wanted to create a potato salad that was similar to the classic, but kicked up the flavor a bit, and of course, took out the mayo,” Half Baked Harvest explained. The recipe developer’s mother never let her eat potato salad as a kid because she didn’t like mayo.

So instead of using regular mayo, Half Baked Harvest makes cashew mayo by soaking raw cashews for 30 minutes and then putting them in a food processor with some mustard, garlic, and oil and blending until it reaches a creamy mayo-like texture.

The rest of the potato salad consists of baby new potatoes, basil, dill, chives, lemon, salt, pepper, and crushed red pepper flakes. Just cut everything up, put it in a bowl, and mix together with the cashew mayo. Half Baked Harvest recommends you serve the potato salad warm, but it’s also good cold right out of the fridge.
