Make Healthy Sweet Potato Skins (in Time for Your NFL Draft)

Football season is upon us, and even if you aren’t a die-hard fan, at least half-time snacks are something we can all get behind, right?
Exhibit A: Each year, my college roommates and I participate in a fantasy football draft in which the winner is crowned the host of our next reunion. This is great, in theory, but at least half of us fail to update our rosters through the course of the season, skewing the odds in favor of those who actually deserve to win. (Read: not me.)
Speaking of halftime-snacks, these healthy sweet potato skins from Pinch of Yum won’t let you down — even when your fantasy team does.
First, bake these sweet potatoes until fork-tender, then cut them in half so the insides cool slightly. While they cool, sauté shallots in butter until translucent and add in a few handfuls of fresh spinach. Hollow out the sweet potatoes and mash the insides with cream cheese and sour cream, stirring in chickpeas, spinach, and seasonings. Top with shredded mozzarella cheese and bake until melty.
