The best healthy dinners for families are the ones that require just a few ingredients (ideally most of them vegetables!) and minimal equipment, and can be made quickly.

Weeknights are busy enough without having to spend an hour making and cleaning up dinner when you want to eat well. Here are 10 of our favorite healthy family dinners for busy weeknights.

1. Sheet Pan Shrimp Makes for the Easiest Taco Tuesday

Use a sheet pan to quickly cook some shrimp (you can use previously frozen shrimp) and load these tacos up with a crispy, colorful slaw. Hint: Buy bagged slaw and use the dressing called for here.

If pancakes for breakfast-for-dinner are becoming boring, shakshuka is for you. This vegetable hearty dinner can use almost any greens. Serve with your favorite whole-wheat flatbread and fresh fruit.

3. One-Pot BBQ Chicken Burrito Bowls

These BBQ chicken bowls are amazing because they require just one pot and use up frozen corn and canned black beans. Plus, they can be eaten standing, bowl in hand, for those really busy nights.

4. How To Make One-Pot Pasta Primavera

Pasta primavera sounds fancy and heavy, but it is one of the lightest, most vegetable-forward pasta dinners we know. Coated with a creamy butter and Parmesan sauce, it's the healthy equivalent of buttered noodles.

5. Moroccan-Spiced Chickpea Bowls

Buddha bowls can rely on a lot of prep work for the layered components, but these particular bowls can be made with a few shortcuts. Buy frozen brown rice or other mixed grains and pre-chopped greens, and use an electric pressure cooker to quickly cook the eggs.

6. Cheesy Tomato Chorizo Orzo Skillet

Orzo is the queen of pastas because she cooks so quickly, soaking up gorgeous saucy flavors along the way. Use this recipe as a template for any sausage that you might have on hand.

7. Greek Chicken Grain Bowls

If you have pre-cooked chicken (either from meal prep or a store-bought shortcut) you can make these bowls in the time it takes to cook the pot of quinoa (about 15 minutes).

This recipe has saved family dinners at my house more times than I care to admit. Grab a bag of frozen potstickers and cook them quickly with vegetables. Pro tip: The vegetables can also be a bag of your frozen favorites.
