This Chicken and Rice Soup Will Get You Through the Cold Winter
It’s mysterious cough season, which means it’s chicken soup season. For all those days when you can’t tell if you’re coming down with something or if you’re just tired, you’ll be glad for a healing, comforting soup like this one. It’s as savory and comforting as any chicken soup you’ve ever tasted, and it’s full of bright flavors like fresh ginger and lime juice.
In a large soup pot, sauté fresh ginger, garlic, and shallots in olive oil for a few minutes. Arrange sliced chicken thighs in the bottom of the pan, and sprinkle them with salt and turmeric. In addition to its flavor benefits, turmeric also makes this soup a really bright, beautiful color. Chicken soup isn’t always the prettiest food, but this is a good-looking recipe.
Flip the chicken over a few times until it’s cooked evenly and all the way through. Take it out and set it aside, then add some spinach to the pot and let it wilt a bit. Take that out too, and set it aside.
Next, add jasmine rice to the pan. Sauté it for a few minutes to toast the rice a bit and let it pick up the flavors from the chicken and seasonings. Then add chicken broth and bring the pot to a simmer. Shred the chicken into little pieces. When the rice is cooked and tender, return the shredded chicken and sautéed spinach to the pot along with the juice of four limes. You can add a splash of soy sauce or fish sauce to give the soup a bit more of a savory flavor.
