Whether or not you’re team pineapple pizza (it’s always up for debate!), you’ll definitely want to be on team pineapple kebab, especially after making this recipe from Cafe Delites! There’s something about throwing fruit on the grill that feels summery. Take our word for it: Eating these charred chicken skewers threaded with pineapple, crispy bacon, and summer veggies will whisk you away on a mental vacation.
These skewers are smothered with a sticky, sweet, garlicky barbecue sauce, which in my humble opinion, pairs way better with pineapple and ham than marinara sauce. To make the sauce, combine your favorite store-bought barbecue sauce with soy sauce, pineapple juice, brown sugar, rice wine vinegar, minced garlic, olive oil, and sesame oil. The sweet, sour, and salty combo pairs perfectly with the skewer ingredients.
If you looked closely at the bacon on the skewers above, you probably noticed that it looks a little different your average diner breakfast side. That’s because the recipe author, Karina, uses a meatier cut of bacon, called short cut — but you can swap it out for any bacon you have on hand and we promise that it will still be smoky, fatty, and delicious.
Another tip Karina suggests is to cut any leftover pineapple into discs and throw them on the grill to serve alongside the skewers. (It’s kind of the best part!)
