It's tomato time around the country! Although it's been a rough season for the garden, hopefully you're starting to see the fruits of your labor. If you or someone else has a ridiculous amount of tomatoes you're not going to want to miss this cobbler made with blue cheese biscuits.
Now generally speaking, I'm a sucker for anything biscuits (even bad ones) or any food graced by a tomato. So this recipe that's a combination of the two quite literally knocked my socks off. I may or may not have made it more than once since Joy The Baker shared it a few days ago. It's that good.
The ingredient list is small and the flavors are huge! It's the perfect side dish to take to your next get together or even a night in when you don't feel like loading your plate full of meat. It embodies summer and will be perfect even though the fall and winter months too!
