Hang onto Summer with These Watermelon Popsicles

PSA: It’s still summer. Once late August rolls around, with back-to-school routines in effect and Pumpkin Spice Lattes in the headlines, we start to preemptively mourn the loss of summer and turn our attention toward fall.

Let’s reclaim what we have left of summer with these watermelon popsicles. They’re cute, they’re refreshing, and — most importantly — they’re delicious.

These watermelon popsicles not only use watermelon as a main ingredient, but they are also layered — with coconut milk and puréed kiwi — to look like a watermelon. Ingenious!

My favorite part is the addition of little chocolate chips to resemble watermelon’s signature black seeds. I mean, the attention to detail in these popsicles is admirable.
