Whether you're a vegetarian or just trying to eat less meat, there are lots of awesome dinners to be had from the grill this summer. That high heat can do wonders for vegetables, too!

These 10 recipes ditch the meat in place of in-season veggies and the results are so satisfying that they're sure to become favorites.

1. Smoky Portobello Mushroom Cheeseburgers

Smoked Gouda, tangy Peppadew peppers, peppery arugula, and creamy Dijonaise jazz up grilled portobello mushrooms and turn them into meatless burgers that rival even the cheesiest of cheeseburgers.
